Apple and Cinnamon Fritters with Vanilla Ice cream and Manuka Honey

Ingredients:

  • 1 cup self-raising flour
  • 1/4 tsp bicarb soda
  • 1 cup soda water, chilled
  • 1/2 cup caster sugar
  • 1 tsp ground cinnamon
  • 2 large apples
  • Canola oil for shallow-frying
  • Your favourite vanilla ice-cream
  • MGO 30 Manuka honey

Method:

  1. Sift the SR flour and bicarb into a bowl. Gradually whisking in the soda water until it becomes a smooth batter.
  2. Peel the apples and remove the core. Cut them into thick rounds.  Combine the sugar on a small dish or plate.
  3. Heat the oil in a deep frying pan over medium to high heat. Dip 1 apple slice into the batter, allowing excess to drain. Carefully add the apple to the oil. Cook for 1 to 2 minutes each side or until golden.
  4. Using a slotted spoon, transfer fritter to a plate lined with paper towel to drain for 20 seconds. Add to cinnamon sugar and toss to coat. Transfer to a plate.
  5. Repeat with the remaining apple slices, batter, fry and sugar.
  6. Serve with a scoop of ice cream and drizzle the manuka honey over the top.
