Ingredients:
- 1 cup self-raising flour
- 1/4 tsp bicarb soda
- 1 cup soda water, chilled
- 1/2 cup caster sugar
- 1 tsp ground cinnamon
- 2 large apples
- Canola oil for shallow-frying
- Your favourite vanilla ice-cream
- MGO 30 Manuka honey
Method:
- Sift the SR flour and bicarb into a bowl. Gradually whisking in the soda water until it becomes a smooth batter.
- Peel the apples and remove the core. Cut them into thick rounds. Combine the sugar on a small dish or plate.
- Heat the oil in a deep frying pan over medium to high heat. Dip 1 apple slice into the batter, allowing excess to drain. Carefully add the apple to the oil. Cook for 1 to 2 minutes each side or until golden.
- Using a slotted spoon, transfer fritter to a plate lined with paper towel to drain for 20 seconds. Add to cinnamon sugar and toss to coat. Transfer to a plate.
- Repeat with the remaining apple slices, batter, fry and sugar.
- Serve with a scoop of ice cream and drizzle the manuka honey over the top.
