Ingredients:
1 cup Granita biscuits – crushed
¼ cup Chopped Walnuts
70 g melted Butter
3 x 250 g blocks cream cheese
½ cup Sugar
¼ Cup Manuka Honey with Yuzu
Rind of 1 lemon
2 eggs
FOR TOP
Rind of a lemon or ¾ cup lemon curd.
Method:
- Combine the crushed biscuits with the walnuts in a bowl and add the melted butter. Press into the base of a springform cake pan and chill for a few hours.
- With an electric mixer, mix the cream cheese until it is smooth. Add the sugar, lemon rind and the honey. Mix again. Then beat in the eggs one at a time until combined.
- Add the mixture to the chilled base and back in a 160 C oven for approx. 35-45 mins, or until firm with a slight wobble in the centre. Allow it to cool in the oven with oven door open a little. Then put in the fridge to chill for a few hours.
- Remove from the pan to serve and finish with grated lemon zest on the top or spread lightly with lemon curd if you prefer.
