Ingredients:
1 ½ cups SR flour
½ tsp Bicarb soda
½ tsp Cinnamon
½ tsp Nutmeg
1 cup chopped walnuts
1 ½ cups chopped dates
100 g butter
1 cup water
½ cup Brown Sugar
1 Tbsp Manuka Honey MGO 30
1 egg
Method:
- Preheat the oven to 180 C
- Add the flour, bicarb soda, cinnamon, nutmeg and walnuts into a bowl and stir to combine.
- In a medium saucepan add the Butter, Honey, Brown sugar and water until melted, add the dates and stir well. Set aside for 10 minutes.
- After 10 minutes, whisk the egg and add it to the flour mixtutre and then add the butter and date mixture. Stir with a wooden spoon until all the flour has incorporated.
- Add the mixture to a greased loaf pan or large (23 cm) 9 inch round cake tin. Bake for 45 minutes or until a skewer comes out clean when inserted. (If the cake starts to get brown early, cover with foil and continue cooking.)
- Cool on a wire rack. This is lovely as it is or served with butter.
