Ingredients
3½ cups Dry ingredients of your choice – examples below
Rolled oats – 1 ½ cups
Chopped slivered almonds ½ cup
½ cup chopped apricots or choc chips
Sunflower or Pumpkin seeds ¼ cup
Sesame seeds 1 -2 Tbsp
Desiccated Coconut – ¼ cup
½ cup Peanut butter (or your favourite nut butter)
½ cup Nature’s Gold MGO 30 Manuka Honey or Nature’s Gold Eucalyptus honey
150 g Dark chocolate for decoration
Method
- Add all the dry ingredients into a large bowl and mix to combine.
- Add the honey and peanut butter to a saucepan and heat gently on the stove until it reaches a medium temperature. When bubbles, start to form around the edges, lower the heat, stirring continuously for 5 mins with a wooden spoon, scraping the bottom of the pan to ensure the mixture does not catch and burn until it reaches a thick caramel stage.
- Add the mixture to the dry ingredients, it may be a little stiff at first, and press into a 20 cm tin lined with baking paper.
- Refrigerate for a couple of hours. Melt the chocolate and drizzle over the top. Cut into bars.
