LEATHERWOOD Honey only comes from the wilderness areas of western Tasmania, Australia. The Leatherwood tree, Eucryphia Lucinda, blooms annually for a short time with an abundance of extremely delicate white flowers with a piquant scent. Flowering from approximately January until April, the leatherwood tree is endemic to Tasmania and originated nearly 65 million years ago. The plants are normally hidden deep within the forest and can be difficult to access.
This honey is very smooth on the palette and the flavour is fresh and clean. It also has lightly spicy notes and is a very pleasurable honey to eat.
Leatherwood honey is known for its prebiotic and healing properties.
It's high in antioxidants, which is great for the prevention of heart disease, arthritis, and even cataracts. And its low glycemic rating makes it a diabetic-friendly sweetener.
Being a raw honey, it may crystallise, this is a natural characteristic of raw, natural, organic honey.
